Braise, dry, roast, blanch, whatever...it's here, and it is accurate. My hundred plus uses confirm the author knows his stuff. This is the perfect gift for any cook, no matter how accomplished. Okay, back out Mario Battali and gang. Easy to find what you're looking for, clearly labelled, chock full of little cooking tips. This guy did a perfect job. You'll wonder how you ever did without it! A 5+. It'd make a great gift, too.
